Cutlets

Take a large saucepan. Add 2 cups of mashed potatoes, 1 cup of finely chopped raw chicken/beef/fish, 1 cup of finely chopped onions, 1 chopped green chili, half tsp of garam masala powder, a few coriander and mint leaves, 2 tsp salt and 1 tsp vinegar. Mix all of these well and knead so that you get a homogenous mixture. Be warned that the mixture might get sticky and you may feel that your fingers are getting glued to each other!
Then add the binding agent, 1½ cups bread crumbs powder, little by little. This will dry up the mixture initially and after a while become even more stickier than what you started with!
Keep going and in a few moments after the bread crumbs have been added completely the mixture becomes 'domesticated' and controllable! Make small balls of this mixture and flatten them, before dipping in egg white and deep frying in oil. Enjoy!


Medu Vada

Wash and soak 1 cup of urad dal for six hours. Drain the water and blend it with 1 tsp salt, ¼ tsp of asafetida, 8-10 curry leaves, 1 tsp of cumin powder and 1 tsp of crushed black peppercorns. Heat oil in a kadai. Wet your palms and take batter into the palms. Shape into balls and make a hole with the thumb in the centre like a doughnut.
