Rice Dishes


Dosas

Soak 3 cups of boiled rice and 3/4th cup of urad dal overnight. Drain the water next day. Grind the above mixture with salt and a pinch of yeast. Make a smooth batter and allow the batter for at least 2 hours or more for it to rise to double the size. Fry the dosas by spreading the batter thin over a greased pan.


Jeera Rice

Heat 2 tbsp of oil in the pressure cooker and add half a tsp of salt while the oil is heating. Add half tsp of jeera and half tsp haldi powder. Fry for half a minute. Add 1 cup of uncooked rice and fry for about two minutes. Add water so that the meniscus of water is about 2cm above the level of the rice. Close the lid of the pressure cooker and let it cook for two whistles. Let the cooker steam out.


Fried rice

First prepare the rice. [For this, put 1 or 2 cups of rice in the Pressure cooker with half a tsp of salt and add water to a level of 2cm above the level of rice, cook for 2 whistles and let the cooker steam out]. Fry 2 onions and 2 cloves of garlic in 4 tbsp of oil till golden brown, add 1 egg , 100g of shredded chicken, 1tbsp tomato paste, 1tsp pepper powder, 1tsp chilli powder, a pinch ajinomoto and finally 1 tbsp of soya sauce. Stir well to avoid burning (a.k.a. very well fried!) the above ingriedients. Once the above is cooked, add cooked rice and stir fry for a while. Finally add grated carrot and cabbage and saute for a few seconds before serving.
